A celebration of summer
The long days of summer bring with them a sense of anticipation as we look forward to hours spent enjoying sun-warmed afternoons and golden evenings. At Àclèaf, our MICHELIN Star restaurant within Boringdon Hall Hotel in Devon, the latest menus invite guests to savour the season through refined, expressive dishes.
Each menu is shaped by the abundance of the warmer months, from the freshness of English pea and asparagus to the sweetness of ripe cherries, apricots and elderflower. Elegant and considered, every course has been composed to reflect summer’s natural rhythm.

The four-course signature menu begins with uplifting opening dishes, each offering a distinct illustration of the season. Choose from SCALLOP walnut, caviar; CRAB curry, mango; CHICKEN LIVER Pedro Ximénez, brioche; GOAT’S CHEESE brassicas, lemon.
The menu then moves into beautifully balanced plates including LANGOUSTINE Espelette, saffron; VEAL morel, allium; TURBOT yuzu, green chilli; RICOTTA English pea, Penja pepper.
As the evening continues, richer flavours come to the fore with WAGYU celeriac, truffled honey; GUINEA HEN asparagus, chamomile; ST PIERRE carrot, vadouvan; POTATO leek, smoked garlic.
For the final course, delicate sweetness and summer fragrance lead the way through CHOCOLATE Nicolas Berger, pistachio; DUCK EGG cherry, almond; APRICOT roasted vanilla, elderflower; HONEY crème fraîche, yuzu.
For those seeking a more immersive experience, the seven-course tasting menu unfolds as a journey through heritage flavours, with each dish centred around a distinctive seasonal expression: scallop, English pea, langoustine, squab, wagyu, apricot and chocolate.
Each menu may be complemented by a carefully curated wine pairing. From Kentish Blanc de Noirs to Burgundian Chablis, Piedmont Barolo, Loire Sancerre and bottles from Kakheti, Canelones and Burgenland, every pour is chosen to elevate the menu’s seasonal flavours.
