From hive to plate
On 20th May, World Bee Day offers a moment to celebrate the pollinators that play such a vital role in our ecosystems, gardens and the food we enjoy. At Àclèaf, the MICHELIN-Starred restaurant nestled within Boringdon Hall in Devon, it is also an opportunity to shine a light on something a little closer to home: our resident bees, cared for in hives on the Boringdon estate by experienced beekeeper Ash.
Harvested throughout the year, Boringdon honey reflects the changing character of the surrounding landscape. Its flavour shifts with the seasons according to what is in bloom, making each harvest subtly different. It is a small but meaningful expression of our little slice of Devon, linking the land beyond the manor to the kitchen at Àclèaf.
Boringdon honey features in carefully considered seasonal dishes across Àclèaf’s signature and tasting menus, including a crème fraîche mousse and honey parfait served with yuzu ice cream.
